My corn has been doing great - - we've had some the past few nights. I've given quite a bit to neighbors, but still can't keep up. Does anyone know how long you can let ears stay on the stalk after the silks turn dark brown? The variety is G-90 - - sweet & great vehicle for butter!

And, has anyone had success freezing corn?

We just finished the last bag of last years for dinner last night along with squash boats from this years yellow squash.

Yes, we use one of those scraper type remover things and then bag it in the freezer. Wife blanches before we scrape it down to the cob and then removes all of the air from the bag with a straw.......GOOOOOOOOOD stuff........God bless Dennis

X's 2, My wife will also blanch whole ears, then cut half into 3rd's and the other half she'll scrape off then into freezer bags. Corn seems to last longer for us than other veggies.

We will pick ours when ripe and do the process above and try not to leave them for whatever critters like corn too.

I got 40 containers and we would have gotten more but we think the deer got the rest.

I blanch in boiling water for 7 minutes. Then cool the corn on the cobs in cold water. Then cut it off and scrape the milk from the cobs.

I then either put in plastic containers with lids or in a bag and seal with my vacuum sealer.

I then thaw it, add butter and salt and just cook till hot. It's really really good.

There is no firm answer to that question, however generally the window is very short. A few days for ideal corn. This, obviously, can differ with heat or moisure. Last year we had extreme heat and low moisture. My corn overripened VERY quickly. If its cooler/wetter you might be able to leave it on a tad longer.

The general rule of thumb is something like 20 or 21 days after first silk the corn should be at its prime to pick.

Freezing corn works very well. I freeze corn every year and it keeps very well. It is easy and will save you from having to waste left over corn or feed to the cows.

For storage, we cut the corn off the cob, and fry it in butter, with some peppers and onions, a pinch of sugar, and some salt.

When it has been refrigerated long enough the butter is solid again, we vacuum seal it in 2 portion sized bags, and freeze it.

When we want to eat it, we microwave it right in the bag.

This method also works particularly well with corn that is not good on the cob, either because it is over grown, too tough, or mushy. Just fry it up, and it is delicious.

We tried G-90 for the first time last year, an excellent "peaches 'n cream " style corn. Personally I always shuck an ear in the field and eat it to see if it's ready !! Been freezing corn for almost 30 years - wife blanches it for a few minutes then puts it in the sink full of ice water to cool it down real quick. She'll cut a bunch off the cob and some we leave on the cob, into the ziploc freezer bags and into the freezer. If you are going to pick corn to freeze it's best to "have the water boiling" before you pick the first ear - an old saying with merit. The sugars go quick in corn once it's picked - better to leave it on the stalk an extra day or two if you can't process it the very same day you pick it. We like to be cooking it within a few hours of picking at the most ...
