I'm sure a lot of you guys raise gardens and have some recipes you might like to share. This year has been great so far and we have had lots of fresh onions, radishes, tomatoes, peppers and squash. I have one very favorite recipe that is always a hit with company; it's easy to fix and soooooo goood! Here it is:

1 cup of chopped onions
1 cup of chopped peppers ( make your own mix of hot/mild and yellow/green/red peppers)
2 cups of chopped tomatoes.
Wishbone (original) Italian Salad dressing

Mix the veggies in a bowl and cover with the Salad dressing.
Dip with Tostitos chips. MMMMM good!

Two slices wheat bread(prefer homemade...)
Large ripe tomato
Mayonaise
Sea salt

Go out to garden and pick ripe tomato from vine
Wash Tomato, then slice in thick slices
Put mayo on bread, add tomato, sprinkle with salt to taste
Savor :D Yum!

My Mom discovered that recipe, back in the late 30's and introduced it to me in the 50's. One difference; skip washing tomato and sometimes, skip bread and mayonnaise!

Yum! A nice ripe home grown tomato, eat it like an apple, with a sprinkle of salt. Yum!

My wife likes to layer sliced tomato, fresh basil leaves from garden, thin sliced mozzarella, and then drizzle with balsamic vinegar, and maybe a little olive oil. Let that "marinate" for a few minutes.

A few days ago, she made pesto with fresh basil from the garden. tasty tasty!

Can't remember the name, but there is a cafereria chain in the south that has the best spinach salad I ever ate. Spinach salad, mac and cheese and chicken fried steak... I'm good for another 500 miles driving to Memphis.

1st sandwich: Bread (white or wheat), tomato, mayo, salt, pepper.:licking::licking:

2nd sandwich: Bread (white), tomato, mayo, salt, pepper, cheese. Toast open face so the cheese melts over the tomato. :licking::licking:

3rd sandwich: Bread (white or wheat), tomato, mayo, salt, pepper, sliced (long way) cucumber. :licking::licking:

4th. It may take a few trys to perfect these recipes.

Not from the garden, but cream cheese and sliced green olives. Strange but very good.
