I would use 4" minus diameter crushed rock for erosion control. 4" minus means that at least 60% is 4" and the other 40% is a combination of rock smaller that 4" which usually fills the voids well. Crushed stone also locks together well so it stays in place better than round river rock.

Ive thought about rip-rap, but ive temporarily put about 5 yards of large sandstone in some key areas to serve as check dams. With all our rain here lately i will put down some bermuda seed and hopefully get it started before the growing season ends in October

Normally if you just cover the ground with one layer of stone it will hold up well. The sides need to be slightly rounded up so you can lay the rocks up the edge. Some of this might require hand work to place them without adding a lot of material to the ditch. You should dig the ditch deep enough to allow the placement of the 4" layer of rock in the bottom and sides.
