Tired of Fruit Cake at Christmas?

Not sure who the others are that say it's good....but personally I can't figure why they ever stayed in business selling those round bricks.

My wife makes a similar cake which is a traditional Trinidadian Christmas cake. She soaks raisins and occasionally other fruit in rum for the whole year then adds it to the cake batter. It makes a heavy fruit cake style cake similar to what 2LaneCruzer has posted but with a rummy taste. It can age wrapped in tin foil also and not dry out. Most if not all of the alcohol evaporates during cooking so it isn't an alcoholic cake. I have eaten rum fruit cake that must have been soaked in rum after baking, a large slice would give you a good buzz.

I used to work with a guy that would make a rum cake once or twice a year. He would make the cake and bring it to work not quite finished. Around lunch time, he would soak the cake in rum, I think it was 1/2 cup and then do the final frosting with fresh whipped cream. :licking::licking::licking: We were happy to see him retire but we sure do miss the rum cake. :laughing::laughing::laughing:

I love fruit cake. My mom still makes them and they did not last long. :licking::licking::licking:

For the last couple of years, I have wanted to make my own fruit cake with the fruit I have dried. Rehydrating the dried fruit in rum or brandy is the plan.

You know we used to live about 22 miles west of the Collin Street Bakery so I've been there many times, watched through a window when they were making the fruit cakes, and bought cinnamon rolls, cheese cake, etc. in their store, but never did try one of the fruit cakes. They just always seemed too expensive. However, they did look good, and I know in the mid to late '90s, they claimed to have shipped fruit cakes to every country that wasn't behind the iron curtain and to some that were.

What? No rum in it?:confused3: Just kiddin'. It looks like a very good recipe. Do you age it 30 days at room temperature or is it refrigerated/frozen. My wife freezes her banana bread and zucchini bread and they are great when heated in the microwave.

I started giving 10lb blocks of cheese for Christmas presents. Seems to be well received by middle aged and senior persons. Doesn't last long enough to be re-gifted.
Next year I will co-package the cheese with a box of raisin bran.

I don't know if it is Hostess or some other brand, but there is a "personal" fruit cake shaped like a large deck of cards that
is just outstandingly bad. It is so heavy, that my BIL and some friends use them in their chucking machines as a standardized projectile. Hey, it's edible, kinda, so at least wherever it falls some critter will enjoy it.
I wonder how long an army of ants would take to eat a small fruitcake. Boy things will be hopping in the hive tonight. :dance1:

I love fruit cakes that are not running in rum, but rum is good..., are not solid fruit and actually have a cake element to them. And I'm not much for sugar glazed anything so the idea of having my own fruit to make them sounds really interesting and attractive. Raisins. Dates? Dates really gum it up, but that's how many like it for sure.

Years ago (30+) I used to order cheese, and send gifts such as you describe, from an outfit called Norris Creamery in Harriman, TN. Sadly they went out of business decades ago. They had some of the best cheddar ever.
