Is the sap able to move from compartment to compartment? The reason for dividers in an evaportor is to move the sap towards the draw off as it concentrates. In a commercial evaporator the reason for more boiling in the back is the sugar content is lower (more water) and hence has a lower boiling point.

Almost ready to tap My one maple, last year did it for the first time and was filling 3 buckets a day of sap so at least this tree is a good producer.
Trouble is storing the sap all week before I can cook it in my little pan on the week end, Only made about 3 qts last year, hope to get a whole gallon, been saving the empty syrup containers all year in anticipation.

Those are some sweet:) looking home made pans here you guys are using, some one had a nice small one on craigslist for $350. but I couldn't justify it with my small production.

We do love Maple syrup :) Up to $50. a Gallon though:( !!!

We have three maple trees and hope to start tapping them next year. For small production, is there any reason why a stock pot on a gas stove wouldn't work?

We have a "3 tree sugarbush" and use a 2 burner gas camp stove with two 8x12x6" deep stainless pans.
Uses a lot of gas to get a gallon of syrup - about $40 worth.
I plan to convert a cracked old Vogelzang boxwood wood stove to sugaring service for next sugaring season.
It's an excuse to do some cast welding and besides, we've got more firewood here than I can burn with 2 stoves in the house & one in the garage.

this year as we say in french "putting the cart before the horse" started tapping 40 maple trees, then have a lot of water, i started evaporating water with a gas burner, to expensive i decided to built a wood burner with a 1/4 inch steel thick, butt i have some questions about adding an insulating wool outside, i will weld a shield steel plate with less thicker metal and fill it with wool. what do think a bout that ??

Man i ran out of the maple syrup my Michigan cousin brought on her trip out to Washington state. :(

It was the best syrup i've ever had. It was so thick it started to crystallize in the bottle, nothing like the crap they sell at costco.
