Fellas,

I need some other meal ideas for cucumbers other than in a salad. Any body have a good cucumber salad recipe? I'm giving all my cukes away because I can't eat that many without having a salad everyday, and that is just not me

My Mom always made a cucumber salad. Cucumbers, Sour cream, Onions, salt pepper.
Also, sliced cucumber (round ) with a dollop of creme cheese.

Have you tried making Refrigerator pickles...either dill or sweet...just google refrigerator pickles...plenty of recipes ...We just make 9 quarts ...Yum ! and easy to make...no boiling, sterilizing jars...easy...!

X 2! I can make a meal with cuke/onions fixed like this, along with some fresh peppers and maters out of the garden...in fact, that's what I've been eating for about a week, for at least 2 meals a day...along with some ribs/sausage cooked on the Egg.

I think I've tried every recipe mentioned above, and in spite of the fact that my wife and daughters like raw cucumbers, I've never had any use for them. It they ain't pickled and I can't give them away, I'd throw them away.:laughing: I know I'm in the minority on this, but I'd as soon eat raw watermelon rind as to eat raw cucumbers.:laughing:

We use sliced cucumbers on sandwiches with bacon, juice them (Greenstar juicer) with other veggies and fruit, or even just eat slices with a little cheeses as a snack.

I just like them cold and raw with salt. I chill a plate in the freezer, peel, slice and salt on the cold plate and enjoy

We do cream cheese and cukes with a bit of salt and pepper for a sandwich.

Cuke salad to tomatoes, EVOO, Balsamic vinegar, good mozzarella cheese salt and pepper.

Making pickles of course. This weekend I was out a funeral. For the lunch afterwards, the food was simply, southern awesome. :licking::licking::licking: One lady had made pickles that were chunked cut, not thin cut or spears. Best danged pickles I have ever eaten. I was talking to two of the ladies who were preparing the food and I mentioned I had three helpings of the pickles because they were so good. :licking: One lady, kinda smiled but then hid the emotion. The other lady pointed at her and said she had made the pickles. I said they were great tasting pickles and not like Aunt Bea's pickles. :laughing::laughing::laughing:

My MIL mention how good the pickles tasted and I told her about the conversation I had with the two ladies. MIL asked who they were and I pointed out the Pickle Lady. Course MIL knew the Pickle Lady since she is a neighbor so she went to get the recipe.

Use the Googles to find recipes for cold cucumber soup. Very refreshing on a hot day.

Basically a cucumber or two peeled, seeded and chopped, some buttermilk, a can of cream of chicken soup, a couple of green onions chopped, salt and pepper or lemon pepper.

Whiz it up in a blender, stick in the fridge for a couple of hours then enjoy.

Growing up we never raised lettuce; so a staple summer item was a BCT. Also the above mentioned cucumber sandwich or sliced cukes in salt, pepper, and vinegar; and of course various pickles to last through the winter.

We keep a cucumber, tomato, onion and pepper in vinegar and sugar salad going all the time. You can use the liquid for a week or two if you just add enough tomatoes for one day. A couple of nights ago I added sliced cucumbers to my spinach fruit salad. {along with a little homemade salsa} And I eat two or three straight up everyday.

PS: 30 odds years ago when Mamma and Daddy went out west in the RV, I stayed at the Larro Ranchero to keep things moving along. Well it rained everyday they were gone, and I was making 5-7 five gallon buckets of cucumbers a day. It got so bad I wrote a blues song about it, The Cucumber Blues. Any time I get in a scary situation, like the time I startled a sow bear and her cubs, I sing a few bars.

Large plastic storage dish full of sliced cucumbers and onions. We add one or two finely chopped jalopenas and some salt, then water, chill, enjoy, scrumpticious.

Before getting major dental work I could not eat a regular cucumber.
I would take my Salad Shooter and run them through it with the grater blade then add salt and Ranch Dressing. I could eat it with a fork and it was great! Kinda like cucumber soup.
Sometimes I would use Thousand Island Dressing.

Great Ideas and recipes! So far today I had 2 cucumber sandwiches. Just cukes, Mayo and salt & pepper. Nice refreshing sandwich. I will be trying some other recommendations. Thanks guys!

I planted "Burpless Hybrids" this year not knowing any better. These suckers get long and skinny, not to mention they also curl and are shaped funny all the way around. They eat just like a cucumber but I won't plant them again.
