The sour cream takes some of the edge off the vinegar/sugar mix without getting it to sweet.

I drain as much of the liquid off before putting it in my plate, so it is't that strong tasting. But we put Jalapeno pepper and onion in with the tomatoes and cucumbers, and that gives it a little kick. We have been eating peas out of the garden just about every meal. I will dribble some of the vinegar/sugar mix on my peas, and it is real good. Kind of like hot sauce without the heat.

I second the sour cream, vinegar and sugar w/salt and course black pepper...mix in a bowel with peeled sliced cukes and white (vidalia) onion slices...must be chilled for the best taste...
Also great on fresh lettuce...

I love them raw with salt and pepper. For the big ones that got away from us, I peel them, slice them in half, scoop out the seeds, and grate them, squeeze out the juice, and mix with sour cream. Goes good with Pad Thai or Indian food on pita bread as a dip.

Pine got it right. The vinegar and sugar goes in first. I prefer a little more tart. Then it's regular dining tablespoons of sour cream to get it kind of creamy. The sugar is just sort of dumped in until it breaks through the pure sour. After you make it a few times you'll get used to doing it.

When Mamma makes it, she uses equal amounts sugar and vinegar. We don't like it that sweet. {or like the calories from the sugar}

I like Cukes almost anyway but here is one to try and one that I really like.

Slice larger cucumbers endways into about 1/4" thick slices. Put flour on both sides and fry in a pan with shortening. Salt and pepper.

When they turn medium brown and slightly crispy, take them off and eat when hot.

That is the way to make a healthy vegetable unhealthy, but that is good for once or twice a year. :thumbsup:

Does it matter the type of vinegar used, apple cidar or white distilled etc?

Similar to Larro Darro's suggestion, too. Sliced cukes & chunked tomatoes, w/sweet onions (Vidalias preferred) every other batch or so. Thin Miracle Whip (much sweeter than mayo) with a spoon of water & dashes of vinegar and/or lemon juice to a runny consistency. Add black pepper to suit.

Serve very cold on a hot day with a sandwich of hard salami on wheat or rye with brown mustard and a glass of lemonade. Salad equivalent of a root beer float on the hottest but will 'stick to your ribs' & more likely to get you back on the job after lunch. ;)

I almost always use apple cider vinegar...but sometimes use a red wine vinegar...
