The enclosed photo is an old single spool valve that came with my "new" splitter. It works great. BUt the splitter was set up for two man operation, and Im only one man. So I wonder if anyone can tell me if I can remove the two end plates and put the handle on the other end of the valve body. It looks like this is possible, but I wonder if opening such an old valve (which so far doesnt leak) is a smart idea. There is a plate on the valve that says "Victor". THe piston for this splitter is a 5x36 by the way that I repowered with a 6hp diesel engine and a new 16gpm pump. Oh my it's a real splitter now

Can you take and just turn the valve around to where you want it. the fittings I see in the picture look like water pipe stuff and should not be used on the under pressure lines. The input and out put lines would need to trade sides, but it looks doable the pump looks to be new as you said so a couple of new fittings would be in the budget.

The iron pipe is on the way out to be sure! The valve body casting is marked "IN" and "EX" so I supposed that to mean I couldn't just reverse the flow through the valve. Am I right about that?

But the end plates look identical except that one has the handle and one is blank, so my question is: 1.) "Can I change the end plates around and get the orientation I want?" 2.) Is it smart to disturb such an old valve in the first place?

I am not sure if the porting or lands in the casting symmetrical to allow you to swap the lever from end to end. Some valves will allow swapping the spool and some won't. Can you measure from the end caps to the work ports to see if the distance is the same from both ends? If yes then there is a possibility that this spool can be swapped.

Looking in from the center port on the exit side I see that the spool has two grooves on either side of the center. The work ports look pretty symmetrical. I needed to hear that there are valves that allow this.

Am I dreaming if I think I can disassemble this and put it back together reusing the original orings? (And not have a leak)

Depends on the condition of O-rings. Sometimes from heating and cooling the seals can get hard and take a set. If the seals are still pliable you should be able to reuse them.
