I think you're simplest solution is going to be solar. A really simple system, where the pump is direct-coupled to the solar cell, no inverters or storage batteries. When the sun shines, the pump runs and fills a tank.

On-demand pressurizing pumps work in RV's from a tank. Pump water from a cistern to a tank with solar and charge a pump battery maybe.

Heck, just keep a deep cycle marine battery on a solar charger that powers the RV pump and you're good to go.

An intermediate tank would be a good place to add some filters and sanitizer method (UV, whatever) if water is coming from run-off into a cistern.

Sounds kind of like an RV that never moves. Just operate it like an RV with water stored and pumped via 12v.

I'm not clear about the pressure balancing valve?? What does that do for you? Never heard of one.
If you put an insulated hot water tank on the tank tower with a check/ balancing valve in between them, and put a wood burning outdoor stove with a heat coil to the hot water tank, you will have the same pressure on both lines, and plenty of pressure for a shower/ sink/ toilet.... You just need to dig the well to periodically pump the water up to the tank....
