Have 3 acres to mow. Tired of using Deere Rider. Have to make extra pass when grass is tall. Looking at a 1951 IH Farmall M with 8' brush hog(overkill). In good shape for 3 K. Should I go this route?

That's an awfully old tractor. I think that cost something like $2500 brand spankin new in 1954. That says something about our dollar doesn't it? I suppose if it doesn't work out you could always sell it to a collector.

A few things:
Number one-Is it a tricycle or wide front? Run away from a tricycle unless your ground is dead level.
Number two-That's a big Tractor. Do you have obstacles to go around and tight turns to make?
Number three-That's a heavy(ish) tractor. How soft is your soil? Do you mind making ruts?
Number four-a bush hog is not a finish mower. It'll knock it down, but it won't be pretty. Do you need/want pretty?
Number five-that's a tall tractor. Do you have hills? How many? How steep? Anything tall would be pretty sketchy on a steep side hill.
I had two Deere riders and hated them. I found a well used eXmark for about 2500 that's served me well. I mow about 3 acres, mostly a hillside. I've never regretted the zero turn, even though I still need an actual tractor for ground engaging work.

That was actually made for row cropping and stuff so is not ideally suited for what you want to do. If you just want to mow then you have the option of machines designed to just mow grass like a zero turn mower. Lots of companies are making those for something in the $2K-$3K price range or more of course. You might even look into a used one if you're into used stuff to save some money. Likely a lot newer than that tractor is for less money too.

Not telling you 'how to suck eggs' but how are the blades on your current mower?
There are after-market blades available that do a significantly better job that the original type OEM blades. I changed my D110's blades to a "Predator" and the difference in cut was night & day!
There are probably more after-market blades available too. The "Predator" was what my local Mower Shop had - I couldn't be more pleased.
