Ok, so how would I confirm this? I don't know much about diesel engines, so pardon my ignorance, would I need to do a compression test and figure out if I toasted the cylinders? I don't see coolant leaking from the engine so I don't think I warped the head, well I haven't check the oil yet I guess.

Is this an overhaul kit, or a complete rebuild, or all the way to another engine? How do I figure out the next steps? I have a shop so I can spend some time fixing this over the summer (I'll have to borrow a tiller to finish my garden, how embarrassing).

I have changed heads on a car that was warped from overheating so I'm not a total beginner, just not familiar with what to do with a diesel.

I was feeling smart since I bled the lines and charged the battery and got it started, now I feel dumb again. Also I feel like I'm confessing to the tractor priests or something...heh heh.

No, how would I check that? Is the theory that it's not sealed properly?

Theory is that as fuel is removed, air has to come into the tank through a vent, or a vacuum in the tank will slow or stop fuel going to the fuel pump.
But from your description, there is more to this with the overheating..

PM member joecdeere (hope I spelled that right) and see if you can get a copy of the service tech manual from him.. or go online to get a copy for your 755.

Hopefully we can help you dig to the bottom of this and get going again.

We purchased a JD 855,, actually I purchased it, and gave it to my SIL next door.

I swear,, my SIL would be tearing out his hair if I were not next door to calm him down.
The 855 is finicky about how much antifreeze is in it (no overflow tank).
The thing almost stopped mowing one day (fuel filter)
With patience,,, you will find it is a great tractor.

Black smoke sounds like a rich condition (too much fuel) to me, not lean (lack of fuel). Have you checked the air filter?

+1 - check the air filter, if they get too dirty and clogged, your engine will run a bit hotter, lose power and stall, just like the symptoms you're experiencing.

I ve had the same issue with my 755, It acted the same , Check the plug on the electric lift pump and make sure it's also running, Mine vibrated apart once , Also pull the line off make sure that it's got good flow with the key on engine off , Cleaning the tank is also a good idea I did mine it was loaded with garbage, There's a brass screen in it . Hope it helps, keep us posted
