I like to do smoke chicken. I prefer to spatchcock the chicken; with it laid out flat it cooks more evenly and generally quicker.

I do a rub, and drizzle with maple syrup. with the electric smoke, generally use apple chips with chicken or turkey

I haven't ever laid a chicken out flat, but will try it next time. I usually inject it with creole butter and rub it good and then do the "beer can" style cook on it until it's like 180 internal for the breast. Usually is very juicy, but I don't like the rub I have. I need to find a good one. First thing I ever bought from Cabela's and didn't like, chicken rub. Go figure.

The Maple is a great idea. What rub do you use?

Wow that all looks good!! I need to find someone near me with a smoker and some skills! Never smoked anything but would be interested in learning!

Try my rubb; it's great on chicken...there's a new one out called "Chicken ****" that's good too. I have posted my recipe elsewhere (here's a link https://www.tractorbynet.com/forums/country-cookin/308607-whats-your-favorite-bbq-sauce.html ; post # 40); or if you're interested I'll send it to you.

I always put the rubb on my chicken the night before...the chicken takes up the flavors wonderfully, and it also acts like a brine and the chicken is more moist. Apply the rubb liberally and seal the chickens in a turkey brown in bag. Put in frige over night. I smoke them with chunk charcoal, using Mesquite, Blackjack Oak and either Pecan or Hickory as my smoking wood. I have gotten rave reviews for my chicken as well as the ribs.

Man, I happen to know a guy near you that likes to bbq/smoke stuff like ribs, chicken, meatloaf, etc. He used to own land right across the road from you. He's seriously thinking of smoking a brisket on Monday, but this will be a 12 hour low and slow with injections and prep work on Sunday to get ready for it.

I have the 2nd meatloaf left over in the fridge. Haven't cut into it yet if you want me to bring it by this evening for you. Made it Sunday so still fresh.

That guy sounds familiar! I might pop over Sunday afternoon/evening and see what it entails! We'll be at Daniel for volleyball game this evening unfortunately (for not getting the meat loaf, not for the volleyball, lol).
