I have a wedge of 'sharp & crumbly' cheddar waiting in my fridge... it's from the Pyengana Cheese Factory and has been aged 24 months.
Vacuumed sealed, so it can wait for a special occasion.
Cabot makes what they call "Old School Cheddar". It's aged 4 years and can be purchased only at the dairy, when available. I always get at least one (2#, 910g) block whenever I'm within reach.
