We made Kimchi a couple times. It's just Chinese sauerkraut. Made in a big crock. It was yummy. However - the different types of cabbage & spices were difficult to find and expensive. I always get a large helping of Kimchi when we eat at the local Chinese restaurant.

I thought of this discussion last night. I grilled/smoked some sweet basil Italian sausage, and piled my sandwiches high with my homemade kraut and home pickled Jalapeno peppers. My wife made potato salad to go with it. Cabbage, peppers, and potatoes, all from our garden. Man that was good! That sounds GOOD! I am going to start two batches of kraut today and I am really looking forward to making Reuben sandwiches for lunch and kraut as a side dish for dinner. Italian sausage sounds like a great addition to kraut! I looked last night for Harsch Crocks on the Internet and could not find much so I wonder if they did go out of business.

Both my wife and me can, from our gardens, but we have more than enough tomatoes already canned, so I'm not going to can any this year... I did start a batch of ketchup yesterday, and she finished it and canned it last night...

I grew up with my dad making kraut every fall from our own cabbage, then as a kid I started making it with him. He learned from his mother, and of course, I from him, but once dad was gone, I quit making it...

I still have numerous crocks around here that we made kraut, dills ect.. in... Long ago, I use to make corned beef in crocks too, except it was corned moose and caribou... lol

Cannot do canned 'maters'. Never could but my wife does killer spaghetti sauce. Problem with growing 'maters' is you get so many. Being the hillbilly I am I do like fried green tomatoes though. She canned bread and butter pickles last year but put too much red pepper in them. Good but gave a 3 alarm fire....:laughing:

Thanks goeduck. TBN is great therapy for anything that ails you. This is my social networking site. The people are smart and funny, acerbic and sweet. We all don't agree with each other all the time but we are usually civil about it. No phoney Facebook for me. All the Real people are on TBN.

So I don't see any recipes here. My Mom used to make kraut and I did not pay much attention, didn't like it as a kid. Now I do like it but have never made it. We have several crocks in varying sizes that my wife's parents used for kraut and pickles. Wouldn't mind giving it a try, just don't know how. Thought about just Googling it and finding recipes but that seems a bit hit or miss. Figured I would trust the people here more. :D

So what is the best way for a rank beginner to make his first batch?
