It's more than just a "nicer layout". HST+ is the big selling point, as well as other options that are standard with the grand L. The extra 700 lbs and 2hp are nothing to scoff at either. Bigger loader, telescopic lower links, Auto Throttle Advance, H-DS, more legroom, better seat, tilt steering wheel, electric pto switch, nicer hst pedal, throttle up button...that's pretty much all the things that convinced me to spend the extra for the nicer machine. I just fit better on a L3560 than I did a L3901.
Those are nice additions but for me it wouldn't be necessary.
If I was going to spend $5k more I would have upgraded to the MX4800 which is a step up in cylinders (4), 11 hp increase and 300 lbs more in weight than the L3560.
I know I like my L3560HSTC. I have found the cab to be great! During the summer months the air conditioning has been well worth the extra money. The HST+ is something I didn't know that I would like it, but use it all the time. It basically turns the tractor into a six range instead of a three range. I do most of my work in Medium and the HST+ allows me to adjust on the fly. So the cost difference between cab and no cab has been well worth it to me and the extra features (HST+, nice interior, Auto Throttle, Stall Guard, etc.) are all just icing on the cake.

Thank you for sharing the Big Tex trailer weights. I must have misread some other information I previously found, but now I see you weren't too far off at all with your numbers. This indeed makes me more concerned that I may not be able to safely move my L3650 with loader/bucket, and a box blade with my current truck.
Tractor ~3500lb, loaded tires another 500lb, LA555 right at 1000lb, and L2256 is another 250lb. That with a ~3000lb trailer is 8250.
Box blade is another 400-500, depending on model (likely would get a 66-72" model).
My truck is rated at 6,900 GVWR, 15,975 GCWR, and max towing of 10,170. If I get a proper trailer around 3,000lb...I should be under limits with the weight of gear above.
6,900 GVWR + 8,250 for trailer/tractor...that's 15,150, which is 825lb under my GCWR, so I'd be legal. Definitely would want a weight distribution hitch and brakes on both axles. To be clear, my truck with passengers and gear is going to be significantly less than that 6,900 GVWR...but it's nice to go off that number. I'd say that's about 1k over what I'd really be for my actual truck weight.
I'll 2nd that. Cabs arent good for all use cases or wallets. But that 2 speed HST+ is so worth it. Pretty sure you only get the normal HST on the MXes.Maybe you didn’t appreciate the difference but nevertheless it’s a lot more difference than 700 pounds and 2 hp.
Not intending to start a war here but, considering the models that you are considering, you might wish to look at the JD 2038R, if there is a decent JD dealer nearby.
I looked at one recently as a potential future replacement for my B3350, and was quite impressed.
You will likely find the JD a bit more expensive that either the Kubota or the Kioti. You will also likely be impressed by the features, both standard equipment and optional. It also makes about five more PTO HP than does the 3560.
