Processing meat is not a glorious job, but cutting your own meat should be a huge plus.

There are a handful of beef processors (Tyson is one of them) that process the majority of big grocery store beef.

I know for a fact that some of them have switched to Bromine to use as a rinse/bactericide after the carcus has been gutted, skinned, and hung. They do this to kill all the germs prior to processing.

Market prices of cattle at auction are nowhere near what is being charged at the meat counter.


How much should the processor charge? I guess the price of freezer paper and tape are exorbitant.

Why has Covid 19 hit the meat packers so hard?
This is what the place I go to charges; I pay about $185 for a 220 lb pig.

Ha, ha - I still remember the year my dad came back with his limit of ducks. He got a wild hair and tried to use the GE wringer washer to pluck the ducks. My mom was quite mad. It took dad a long time to get all the duck feathers & duck poop out of the old washer.

My mom never let him forget. After that incident it became my job to pluck the ducks. Whether I went along or not.

my processor charges .64 per # for butchering. that includes vacuum packaging.
My appointment is for sept. Many of the local processors are booked up for months due to beef prices, and lack of beef on the grocery shelves

The frustrating part is, the ranchers are not getting the money. It is the packers.

Sam's Club ground chuck, family pack, 80/20 is $6.38/lb

That's exactly what you need to do... they are around and need to be supported (local butcher shop). The large, 'convenient', supermarkets have shut a lot of them down.

Fortunately, Australia still has the 'tradition' of independent butcher shops, even more so outside of the larger cities. Here in St Helens we have the Providore, who sources all of their produce locally. Pynegana Meats slaughter & deliver sides of beef and lamb once or twice a week. Pigs are processed in Scottsdale, although there is a small slaughter/butcher in Fingal (where I get a small, young porker for a spit-roast... he even helps me fit it on the spit). In Aus, a butcher is known by their sausages!

Look around.

Bought a couple of bone-in choice Rib Eyes at Homeland day before yesterday for $9.99 a pound; slab of baby backs for $2.99per pound. Granted, it was on sale, but they normally have the highest prices in town.

I am not a non meat eating health nut, but I look for the whole tenderloin on sale, instead of the fat filled steaks.

Went shopping for steaks the other day as a Buddy of mine was coming to help me for the day and BBQ steak is kind of a tradition.

Couple of smallish Rib Eye Steaks were $36.00 CDN at one store.

Went to another and got them for $24.00 CDN. Didn't like it, but figured I wasn't going to do any better.

A little put off that my friend left a good pile of fatty bits. Best tasty bits in my opinion. At least the cats were happy.
