I've actually found it's much easier and more consistent to oven finish.

Discovered that with some country ribs I was doing. It started pouring so I brought them in and popped them.in the oven when it was time to tinfoil. They just fell apart.

After that, I smoke, then finish in the oven every time with fall apart results every time

What do you normally set the oven at? We have only oven finished when having a problem.... I would rather have consistent outcomes...

I set the oven at 250. Usually add some vinegar or broth depending on the meat and what kind of sauce im using.

Those chuck roasts I'm doing today are around 6lbs each. So they take around 8 hours with the temp ranging from 225 to 275 on my smoker. So I'll smoke for 4 hours.

Then I'll place them in a tinfoil pan. Pour some vinegar in the bottom to add some moisture. Add my sauce to them. Cover the pan with tinfoil. Then bake at 250 for another 4 hours.

I get 7lb packages of thick cut country ribs from sams club and cook the same way as the chuck roasts.

The timing is the big issue. But to solve that I usually Google the smoke time for the type and weight of whatever cut I'm doing

Probably watch some football although slim pickings. Dish isn’t carrying Fox, CBS only showing a single game p, and then Sunday night game on NBC.

Thinking I might break out the Bissel upholstery cleaner and give that a try for 1st time.

36F and cloudy @ 12:15, headed up to a high of 39F. Sun expected to return tomorrow, but only a high of 37F.

Portion of Depot order that was in stock is ready, will run over and pick that up here in a bit.

Other than that, undone items back on agenda ... specifically old toilet removal, free up water supply valves.

Also track down intermittent problem with electrical circuit.

Might clean out big canister filter on fish tank in living room (overdue)

Good morning. It was 56° this morning .. now 65°. It's been foggy and drizzling rain on and off since about 5 a.m. and the heaviest rain is east of us. With the cold front coming thru we'll be in the 30's next couple of mornings and high 20's Wednesday morning.

It was cold and foggy yesterday morning I seasoned up (course salt, black pepper, garlic powder) about 2# of boneless chicken breasts, before daybreak yesterday .. then into the Instant Pot, with a cup of chicken broth, for 10 minutes / NPR for 20 minutes, then vent. Set the aside to cool then bagged them and put them and the broth from the put in the refrigerator.

Last evening, once it got dark, I seasoned up a 5# Turkey breast (bone-in) and into the Instant Pot with some stalks of celery, a quartered onion, a package of dry onion soup mix, and a cup of the chicken broth (from the a.m. chicken breasts ) and 30 minutes at pressure and NPR for 30 minutes. It came out tender and very juicy.

This morning I chopped up a sweet onion and several stalks of celery the sautéed them in my big soup pot, in some butter. Once the celery / onion were sautéed I added all the left over broth (from Saturday) to the pot along with the previously cooked chicken breasts (cubed) 1 1/2 cups of cut up baby carrots, a full package of egg noodles, basil, oregano, and pepper. I had to augment the broth I had, with two more 48oz. containers of store bought chicken broth. This .. will be lunch.

Kyle is correct about Weikel's Bakery in La Grange. I stopped there, on Friday morning, for some sweet cheese kolaches and some sausage, jalapeño, and cheese.

Texas Toast. Many ways to make it but .. we've found the quick way is the "frozen" toasted in the air fryer at 400° for about 5 minutes. GD Maddie prefers Texas Toast .. over regular toast / jelly.

There's another brand of frozen but "New York Bakery Texas Toast" .. just seems wrong. (No offense Lou).

Good to see first COVID vaccine distribution starting. It will go well if they get the politics out of it.

With the damp cold weather today .. I'm thinking this afternoon will be in the shop. I need to get parts in order to add some lights, switches, relays to our new Polaris Rangers. I need to do some rearranging to bring the Ranger into the shop and close the overhead door.

Place I used to go to had a penne with shrimp and crab meat in a tomatoe sauce I really liked. Place now closed.
