I've actually found it's much easier and more consistent to oven finish.

Discovered that with some country ribs I was doing. It started pouring so I brought them in and popped them.in the oven when it was time to tinfoil. They just fell apart.

Brought them in because it started pouring. That reminds me of my first attempt at cooking a brisket. Our first old and small house had a small gas grill at the edge of a concrete patio with no cover. I'd never used a grill and I'd never cooked a brisket, but I'd heard they had to cook a long time. So I put a little brisket on the grill, and it started sprinkling rain, so I didn't go out and check it for quite awhile. When I did go check it, I found it a bit burned on the exterior and so tough the dog couldn't have chewed it.:laughing: Live and learn.

Yes sir.... That was similar to my first time at a brisket. I invited all the kids over. So we were figuring on 10 of us. Well I misread, had a brain fart and underestimated the time for it to smoke.

So, 6 hours before the kids come, I put the brisket on the smoker. 1 hour before they get to the house, I realized that I misjudged the cook time. It should have been around 14 hours not 6 So I inform my wife, send her up to the store for 3lbs of hamburger instead.

Kids showed up on time expecting good smoked brisket and got served pan cooked hamburgers instead

I made it up to them a week later with 14lbs of thick country ribs

Haven't gotten around to trying my hand at another brisket

Good morning. This is going to be a washout day, rain already lashing at the back door, unlike yesterday when I was the one making everything wet with the jet washer and had the rare please of the sun providing a couple of hours of warmth on my back while I made rainbows.


I am partial to an oak smoked kipper or cod. Never tried apple wood - however good it may be, I doubt it is worth the risk of being caught felling in my wife's little orchard.

Nice work again LS. Your kids are lucky that you have the talent to make heirloom quality pieces. DNA is about the only thing my family would pass on to the next generation.

Randy, having had things stolen by scum a few times, I can relate to how you felt. Always admire the way you get on with life when bad things happen :thumbsup:

The other day Rick mentioned something called Texas Toast. Not heard of that before, but fancied toast for breakfast and always ready to try something new

Good morning. It was 56° this morning .. now 65°. It's been foggy and drizzling rain on and off since about 5 a.m. and the heaviest rain is east of us. With the cold front coming thru we'll be in the 30's next couple of mornings and high 20's Wednesday morning.

It was cold and foggy yesterday morning I seasoned up (course salt, black pepper, garlic powder) about 2# of boneless chicken breasts, before daybreak yesterday .. then into the Instant Pot, with a cup of chicken broth, for 10 minutes / NPR for 20 minutes, then vent. Set the aside to cool then bagged them and put them and the broth from the put in the refrigerator.

Last evening, once it got dark, I seasoned up a 5# Turkey breast (bone-in) and into the Instant Pot with some stalks of celery, a quartered onion, a package of dry onion soup mix, and a cup of the chicken broth (from the a.m. chicken breasts ) and 30 minutes at pressure and NPR for 30 minutes. It came out tender and very juicy.

This morning I chopped up a sweet onion and several stalks of celery the sautéed them in my big soup pot, in some butter. Once the celery / onion were sautéed I added all the left over broth (from Saturday) to the pot along with the previously cooked chicken breasts (cubed) 1 1/2 cups of cut up baby carrots, a full package of egg noodles, basil, oregano, and pepper. I had to augment the broth I had, with two more 48oz. containers of store bought chicken broth. This .. will be lunch.

Kyle is correct about Weikel's Bakery in La Grange. I stopped there, on Friday morning, for some sweet cheese kolaches and some sausage, jalapeño, and cheese.

Texas Toast. Many ways to make it but .. we've found the quick way is the "frozen" toasted in the air fryer at 400° for about 5 minutes. GD Maddie prefers Texas Toast .. over regular toast / jelly.

There's another brand of frozen but "New York Bakery Texas Toast" .. just seems wrong. (No offense Lou).

Good to see first COVID vaccine distribution starting. It will go well if they get the politics out of it.

With the damp cold weather today .. I'm thinking this afternoon will be in the shop. I need to get parts in order to add some lights, switches, relays to our new Polaris Rangers. I need to do some rearranging to bring the Ranger into the shop and close the overhead door.

Place I used to go to had a penne with shrimp and crab meat in a tomatoe sauce I really liked. Place now closed.

Fortunately our local eatery (pizza shop) where we get the chow is busier than ever, likely due to the COVID ...

The other one (just slightly further away) - who we mostly quit going to because they killed off their hot sausage sandwich - was always jammed up on Friday and Saturday nights.

Good luck calling on either evening to place an order and getting through without multiple busy signals.

11.9 inches of snow still predicted for Wednesday.
Perhaps I should go buy six loaves of bread tomorrow. ;)
Actually I have a cranberry scone recipe I'm going to make tomorrow since
today was half spent doing my last two birdhouses.
That's it, I'm done. Ho ho ho.

Took a birdhouse across the street and chatted with neighbors, sitting masked but too close at kitchen table.
Too exposed for my tastes...but still fun and left with a freshly baked pound cake.
Which will clearly live up to its name by adding a pound to me.

my winter go to socks for cold days have been the socks my sister gave me for Christmas three years ago.
Almost too thick but comfortable to wear, these Smartwool socks have been pretty durable. Of course now
I might have to add some heavier weight alpaca ones...

nothing to do and nothing planned for tomorrow. How nice.

Perhaps only one project, need to move the generator over next to the house, test it, then install the cover for it.
I want to see how noisy it is in the corner area where it lives, facing a large open yard and the woods.
Am going to try to install some noise abatement fencing/baffles. Who knows, maybe build a little house for it.
Lots of fun threads on TBN of guys who have built amazing generator enclosures, some true little power plants with
powerful diesel engines. If I ever move out of here, I might sell this gen back to landlord and definitely go whole house again at
next place, which I would own instead of rent.
I particularly like the 25-50kw gens one can run off their tractor pto as a backup.
Just drive over and plug in.
Definitely a satisfaction in being self reliant.
