My current FEL setup has a dual spool valve configuration with 2 levers one for up/down and one for tilt. My question is could I replace that block with a 3 spool/3 lever configuration and use the third lever for my 3rd function for a grapple. Sorry if this is a dumb question but the only 3rd function kits I have dealt with were the electric over hydraulic on a 1 lever setup

Yep you can do that. Dedicated loader valves often have regen so the bucket dumps faster, which a generic three spool won't have. You may or may not want the regen. They also make joystick loader valves with an extra spool and lever for a grapple.
If you use a generic 3 spool valve make sure the spool you will use to raise/lower the loader has float. You may need to get a sectional type valve instead of monoblock to get the float on the right spool.

I would like float, the current one doesn't have the option, and I'm pretty sure it doesn't have Regen either because 3 functions are equally slow and the only fast function is down

Ideally you'd get a valve rated for about 25% more flow than your tractor sends to it. If the valve is for a much larger flow, it will be difficult to modulate between off and full on.

You need to make sure the valve you get is compatible with your hydraulic system. As in open center or closed center. Usually it only means you have also have to order a closed center plug, or open center (power beyond) sleeve.
Having the 3rd function electrically operated, I do not see as a minus/problem.
