Quote from the article "new evidence is making it more apparent that the perceived health risks of dairy fats (which are mostly saturated) are less clear than many previously believed."
Not exactly an overwhelming endorsement.

You can find studies that "prove" pretty much anything. The fact that this particular study was conducted by the University of Texas, the heart of cattle country tends to imply a wee bit of a bias.

If you knew anything about UT-Austin, you would know your statement makes little sense.

1) Texas mostly raises beef cattle
2) Texas A&M is the AG school
3) UT-Austin is home to the bluest parts of Texas, more likely to advocate veganism
4) Many studies have shown similar results. It turns out that blood cholesterol is mostly generated by the body when too many carbs are ingested. Most cholesterol that is ingested, just passes through.

I’ve had two doctors over the years tell me a beer a day was good. Does that make it good? Who knows. It is ultimately all up to what we choose to believe.…..believe it or not.

Cattle country ... not Dairy herds. I'd buy the bias bit if it was U of Wisconsin, but don't think I've ever heard of a Texan milk a cow.
Right? We do have a few dairies as fresh milk does not travel well. I've lived in both states. Driving around on rural roads you can see the difference in breeds in the pastures.

West Texas/eastern NM is big dairy country (Lubbock to Clovis and Roswell).

Interesting story and map. Thanks. There is a huge cheese production plant in Portales, NM, right in the center of that west Texas/eastern NM dairy cluster.

Over the years I have grown leery and skeptical about any study concerning foods and nutrition. Of course their are some truisms (refined sugar is always a food with few benefits and lots of drawbacks), but their are a whole lot of "not necessarily truisms". Not only is the science of the human body extremely complex, each person has a different set of body parts that work differently, have different microbe populations throughout their body that greatly affect reactions to food, and live in different environments that may cause them to react differently to different food stimulus. What may be truly harmful to one person may be beneficial to another (take salt, for instance). Some foods in moderate amounts may be fairly harmless, yet be harmful if consumed in excess (beer, caffeine and beef for instance). Seems that too often studies make over-reaching generalizations that don't fit everyone in all situations.

I'd imagine if you had an allergy to something in dairy milk, you might do better to avoid it. Used to keep dairy goats and i notice when drinking their milk that i had less phlegm from drinking it. Also noticed you really want to make sure the goats don't get into willows and eat them, their milk gets a very strong taste.

We’ve been on an industrial scale dairy tour twice. They load their milk into super-insulated tankers, and with no additional refrigeration they can take it 16 hours with only a 2 degree drop in temperature.

The dairy is in NW Indiana and serves markets well into Georgia.
