My Mom used to make sauerkraut and neck bones with mashed potatoes on the side. Not a whole lot of meat there but it was tender and tasty and just fell off of the bones.

Yes, my father would say it at the dinner table and my mom would laugh and we'd all sit there with our mouths hanging open because dad cussed. :ROFLMAO:

Mom would call it an open faced sandwich. I had a long conversation with her about "Why's it called that?" when I was a little kid. I still remember the looks she gave me after explaining it. But in my defense, the sandwich didn't have a face. 🙃

Fried elbow macaroni. Boil the mac per the directions on the box. Drain it then pan fry it in pork chop or bacon grease. Fried until it turns golden tan. Salt and pepper to taste.

Take your cholesterol meds. But it is damn good.
I do this regularly with leftover mac & cheese.

We actually call this "mech" (pronounce mehch, not "mek") - mac eggs cheese ham. Similar to "rech" (similar pronounciation unfortunately similar to retch) which is rice eggs cheese ham, the ham often being chopped bacon.

I first started eating these things when I was a kid and responsible for my own breakfast, I'd usually fry up whatever leftover was on the stove (food safety hah, recently I heard on the radio someone talking about "food isn't safe if it's been left out on the counter for more than two hours" and here I was eating stuff left on the stove that had a pilot light keeping things somewhat warmish for twelve hours).

Only difference is when I was a kid, mom almost never bought meat (and never bacon).. vegetarian... occasionally she'd get a can of spam for us, it may as well have been a new york steak it was bliss-inducing meatness; and also now I'll put in garlic granules, paprika, hot pepper flakes... *hunger increases*

Cannot remember of I posted it or not but when I was a kid, our mid week dinner was always City Chicken and it's almost non-existent today. We can get the local supermarket's meat department to make it up for us, special order and we do. I love the stuff.

I had to Google it as I'd never heard of it. Seems to have been an Ohio/Pa/Indiana thing.
Spoiler: it's pork, not chicken.
