We are doing some remodeling and had new flooring installed. They just put new underlayment down and the new plank flooring. We have a set of bi fold door that are now to tall. They have spring loaded pegs and rollers on the top that are compressed all the way. I want to cut some off the bottom and then reinstall the peg on the bottom that is the pivot. I need to cut off a little more than a 1/4 inch from the bottom. Will that expose the hollow part of the door?

You should be ok cutting 1/4” off. Generally the cheapie bifold doors have 1-1/2” top and bottom stiles. You could confirm by pulling out the spring loaded pegs and checking the depth of the hole with a piece of wire with a short 90 bend at the end.

I've had to cut several where that left no filler at the bottom and I simply glued in a new piece. Left a clamp on overnight.
Done the same thing. Works good
