I liked Rocky Mountain National Park.
We are staying at Red Rocks the day before and night of the concert. Rocky Mountain national park was already penciled in for what may be the only one day excursion in the northern side of the state. That said, national parks scare me in summertime LOL

Colorado, like New Mexico is a pretty big state. Actually combined, more square mileage than California, and a couple of years ago when we spent two weeks out there, we only saw a small portion of the state.

We figure with southern Colorado, northern New Mexico and perhaps a day trip to western Utah, we still won't see everything we would like to see.

NM = Chile 🌶️ capital of the world. The restaurants here distinguish between Mexican and New Mexican cuisine

California mexican food is good but the southwest and particularly NM does it better.
I have to laugh. Thought the Mexican food in California was the best we've ever had.

That said, I'm a meat & potatoes guy and all the Mexican dishes confuse me. Generally stick with a taco or enchilada because I stick with what I know (I know, bad American). Like any happy married man, worst case I'll always ask my wife what she thinks I would like because she knows me so well LOL

That said, will definitely be eating mostly local food. I just get afraid of spending money on a dish I'm not certain of, and fear I'll be wasting my money if I don't like it if that makes any sense.

On that end, open to any suggestions from the people familiar with the local food.

In NM try the chile rellanos and the carne adovada. For dessert try a flan and sopapilla with honey. Anything smothered in red or green chile is good. Locals often order “Christmas” meaning both red and green. If you get to Santa Fe, go to Tomasitas. In Taos go to Anthony’s.

Big states for sure. Plan your travels. Summer prices will be high, but I recommend staying in Taos so that you will have a quick drive to Antonito if you plan to ride the Cumbres train, and good hotels and restaurants. And you’re in the center of a day’s drive around the enchanted circle. Durango, CO is also nearby and nice, and of course a trip to Santa Fe is almost essential. Los Alamos National Laboratory has a historic museum if you’re into that and the National Atomic Museum (Smithsonian) is in Albuquerque.

When I use to drive to Idaho and Montana to kayak a bunch years ago, always thought good things of Wyoming when driving through the state, particularly coming in back from Idaho. Nebraska not so much LOL

Good boating buddy work in Cheyenne after school, I do know he wasn't too fond of that area back 30 years ago.

What show are you going to? Red Rocks for a concert is on my bucket list but I'll never get there. LOL
