My wife used to buy rib-eye and I find that OK but prefer ground beef. She is now allergic to beef so we eat pork, which I prefer. I find it interesting how different people eat differently, and how that changes over time.

That’s because most store bought ground beef is made from old dry cows. My home grown steer ground beef is fantastic.

I've found the general quality of beef (all meat actually) in your typical grocery store to be dramatically lower vs even 15 years ago & nowhere near what was available when I was growing up. Add to that the disappearance of local neighborhood butchers so you have no point of comparison for "good" reasonably priced meat ... I've taken to making my own ground beef from a good cut with lots of fat. A decent chuck roast or brisket makes much better hamburger than what the store sells, & grilled 2 inch steaks are way better than the 1 to 1-1/2 inch steaks they sell you at publix/safeway/albertsons/walmart. Unless buying whole hogs/sides of beef & processing with a butcher you know, I think Costco & to a lesser extent Sam's Club have much better bulk meat, but you need to process it yourself unless you're feeding a family of 12. I think a big part of the problem is the idiotic 0 tolerance for animal fat drummed into people's heads over the last 50 years ... 0 fat ==> 0 flavor. Couple that with the fact that where a lot of the ground beef/pork/lamb we ate growing up used to be made locally by in store butchers from trimmings as they processed sides of beef/pigs/sheep vs at the meat packer or central corporate processor ... the sanitary conditions lead to faster bacterial growth in the current processed stuff. Hell, there are some chubbs of burger from Walleyworld that my dog will sniff and walk away from.
