    Found a video by everything attachments. It explained you want to be 2” higher than the loader arms when sitting on the ground. Mine ended up being 18” off ground plus 2” so 20” is my location.

    Put it on high smoke (220) for 2.5 hours... then bumped it to 275. Once it hit 165 I pulled it and wrapped it in foil. No waiting for it to hit 195. I will then pull it, let it rest for 15- 20 min then cut into 3/4” cubes and go back on for about an hour.
