160 or 180 Deg Thermostat?

Our 1967 152 Perkins runs cool, 130-140 so it seems a thermostat might be needed. Std thermostat is 160. Would a 180 be better for our cool Wyoming climate? It appears that both thermostats are chevy.

Thanks. There is enough sludge in the world without me adding to it. 180 it is.
