I had lambs in FFA. We made our own blocking stand. Don't have plans, but it was extremely simple.
Wood base was made of appropriate size from tongue and groove material, but any solid wood would do. I'd avoid plywood or chip board because this tends to be out in the weather and you don't want it coming apart.
Legs were made from 4 lengths of metal pipe.....maybe 3/4 or 1 inch, don't recall. One end of the pipe was threaded and it screwed into a threaded flange that was bolted to the wood base. This allowed portability by simply unscrewing the 4 legs.
Similarly, there was a threaded flange for the neck stanchion bolted to the top at the front. A short length of threaded metal pipe screwed into the flange. A smaller metal pipe with a rebar yoke welded on top of it slipped into the pipe. Height was adjusted by passing a pin thru any of several holes drilled into the yoke pipe. There was a rope/leather catch that went on top of the yoke to restrain the head/neck in the yoke.
Lengths of the pipe were not critical, but selected to match size of sheep and height of student to allow working on the animal with minimal strain on the student.
STURDY, simple to assemble and transport.
