Dont they just make your mouth water!! My favorite veggie.I have 10 rows in my garden,ill be eating them two meals a day for a month.Not complaining,im bragging.Bumper crop last year.Im just able to get them out of the frozen ground now.

You can pull them in the fall and store them in your freezer. Makes for the same thing and you get access sooner.

You might try mulching the parsnips with a foot or so of hay, then pull the hay back to dig them during the winter. We've done that with carrots with good results.

THEY are parsnips. Im no expert,however ive ate them all my life.I believe they are a member of the carrot family.You can eat them in the fall,but they are much sweeter if you leave them in the frozen ground all winter[havent heard of the freezer trick,would work good for southern folks.To me to describe the taste a properly seasoned parsnip with butter is like eating candy.They say carrots taste better if having been frozen,but mine have always been mushy.Some of my friends cant grow them they say their soil is acidy.I HAD 3 HELPINGS WITH MY SUPPER YUM YUM
