You should also talk to a welder that puts up barns. You want a welder that does "red iron" - they can build anything you can imagine out of steel and they can get you any height (including unusual heights) you want and any roof pitch you want. They can make it look like a house, or a barn or anything else. Check out "Barndominiums" for house looking ones. And you will need at least a foot taller than you think you need if you need clear space all the way to the walls. The wall height is typically measured on the outside from the ground to the roof, not on the inside where there are beams and purlins in the way.
