On the NC side, I have stayed at a nice place with cabins. There are plenty of places in the south western parts of NC where you will not see many people. Standing Indian campground is one of them. One of the creeks at Standing Indian is mentioned in the Foxfire books in a section regarding "Painters." A man was followed by a mountain lion down one of the creeks that has a path that goes to a gap to meet the AT.
I would think there would be quite a few places to visit on the TN side if you stay away from the big tourist places. Fontana Lake and Dam are interesting to see in NC. It is the tallest dam east of the Mississippi. Very impressive.
