I take mine on and off all the time, usually on concrete but plenty of times on "fairly level ground". There's been maybe a couple times I struggled a bit, but it's not been too bad. Perhaps the ground was really quite level there, or I just get lucky.
However, it can give me fits when one rear tire is low. I have a slow leak in my right rear tire (that I really need to get fixed), and if that has deflated very far it gets very difficult to mount the loader. Check your rear air pressure - if that's not off, then it's probably the ground. I'd think the plywood idea would be enough.
