Short version - I wouldn't use 5W-XX in a Kubota, seems to me that's more for automobile engines that have been designed to meet "fleet fuel mileage" requirements. If Kubota says 10W-30, I'd listen.
In cold weather, I don't feel great about 15W-40, dino or otherwise.
For the amount of extra expense involved, I just switched to Amsoil 10W-30 for the better cold starting and added degree of protection that it provides in the event of a cooling failure. I see it as like having collision insurance - you probably won't need it, but it can come in handy.
Just some thoughts, your mileage may vary.

A-#1...I wouldnt even use Amsoil oil to start a bonfire with using wet wood, While IT MAY be a good product...its main claim to fame is its PYRAMID scheme of retailing!
B-#2...Its NOT a nationally available product and ONLY bought thru its retailing "agents" who get a cut out of the profit.
C-#3... Its not an iota better than MANY nationally retailed oils that have been PROVEN, over and over again and are backed up by empirical data..as compared to "published data" on the internet!
D-#4...If the "oil" in question passes ALL ( again..ALL) of the specifications required by the engine maker ( which MOST 10W-30 oils DO NOT pass the diesel requirements) then the oil is OK to use. If 15W-40 Chevron is "OK" to use ( per my Kubota dealer) ( and its what I use in my ISC Cummins) then Im POSITIVE that 5W-40 SYN Rotella is OK to use!
End of sermon about "amsoil" products!
