I figured it out: basically a haunch is a member of the structure much like a brace. It is sometimes used in mortise and tendons. It also helps when I spelled it correctly … sorry for asking a question with such a misspelled key word!

the haunch is the perimeter of the pad dug down to sort of lock in the pad. So depending on your local codes you might dig on the outside edge of your pad a 16" deep x 12" wide trench and put stone and rebar in it (according to code) and when pouring the pad you fill the trench with concrete in conjunction with your pad. This takes the place of a footing.
