I dissolve some salt in a gallon of cold water. I toss in the peach slices as I cut them. When I get enough to fill a bag I rinse them, toss them in the bag and cover them with some light syrup. Do the same thing for canning and they never brown. I think I read it in the Ball Blue Book of home canning.
