To elaborate a little on what Jim said, when you click the Quote button, and when you are taken to the reply form, you can edit out what you want to quote. If the message is a longer one, this can be a bit of a pain to do.
Alternatively, I find it easier to just hit the reply button. Then copy (Ctrl + C) and paste (Ctrl + V) the message into the quote. When you are replying, click the Quote link in the Instant Markup section. When the quote markups appear, just copy and paste the part of the message you want to quote in the center of the quote markups. In case you haven't noticed, the message you are replying too is shown below all the Reply To functions.
