All the comments have been good. Having already bypassed the seat switch, I would try jiggling and messing with the other interlocks to see if you can get it to shut off. Starting with the neutral switch on the tranny control lever, the engagement switch on the pto, etc. I'm assuming this unwanted shut-off is NOT when running hot or after long periods of intense usage. Like Dodge Man i recall seeing posts about rotted/deteriorating fuel level sending units but that should have shown you crud in the filters. The tank has to be vented to avoid a vacuum developing but that seems unlikely to be this issue (pull the cap off and see if it ever quits with the cap off to eliminate that cause.) As TripleR said there have been a bunch of cases of some obstruction in the tank at the fuel outlet which might account for the thing going down to half rpm and then going back up to normal again in your half hour mower test. I do not know how to get in easily to check for obstructions.
