Really having the right pans out would be a no brainer. These are like a 30 plus year old set of Amway cookware that she holds dear for some reason. My sister has 30 year old Alclad that works great, but SHE said the new stuff is crap. I dunno. I still don't know what way we are going. But the idea of roasting some coffee beans seems pretty cool.

Everybody remembers what quality products used to be like but forget the price, it is still out there but you have to pay for it, we have some Le Creuset (I didn't spell that right but it is enamelled cast iron from France) and it costs about AU$200 for a 2lt pot with lid, I think we paid about $90 30+ years ago.
Current Baccarat SS for induction was about AU$450, of course you can buy stuff at Target and K Mart for about $10 a piece and the quality is just not there and they are also very light and do not conduct heat well.

We use cast iron, with and without the ring, on a radiant ceramic cooktop. For about 12 years. Some scratches, who cares.

Yeah, a few scratches are one thing. I've torn though a few of these I'm guessing tempered glass tops when recycling them and they go boom and shatter nicely when broken.

I use my iron skillets on the stove. Needed a new stove so bought an induction stove and L.O.V.E. it.

First day I had it, I put my #9 skillet on it about half full of water. Put stove on high and within seconds, had SMALL bubbles on the bottom of the skillet. It started to slowly boil and the sides of the skillet were still cold (cool).

It does however, have a black glass type top and it's a real pain to keep it looking clean. If the top were white or just about anything than gloss black....

When shopping for an induction range, I too had concerns about scratching the surface with my ancient Wagner square skillet. The salesman said, just put a paper towel between the skillet and the surface. Problem solved. And when you are done frying, wipe the stove with the towel.

The stove is on the way. Now to shop for pans. I don't need a huge set, just a couple sauce pans, and another skillet.

I put my wet 12" skillet on the stovetop last week and heard sizzling, crackling, then "pop", and 2 nice cracks appeared in the glass. I'm looking at gas stoves tomorrow. :thumbsup:

We have not done a thing on this yet. She won't buy new cookware, so an induction does us no good. We looked for a better quality coil burner type, but no- they are flimsy as can be. I think I'm going to get a tank and a gas stove. Either that or a piece of plate and cut holes for the burners!

You could forgo cutting holes, and just have the burners heat the plate like a big griddle.

The paper towel works on lower temperatures but does brown on higher temperatures. I do not slide pans around, same as on a glass top regular electric.
