Hey Dennis, are you Hispanic dyslexic?;) I kid my wife too about her saying chipol-te pepper instead of chepot-le.:D

My little local Mexican food restaurant makes great chili rellenos. They make them with your choice of beef or chicken fajita meat stuffed in the battered and fried poblano. Then, they cover it with your choice of queso, ranchero sauce, or salsa verde. They serve it with rice and your choice of refried beans or charro beans. The platter is $8.50 and comes with complimentary chips and salsa. Both the quality of the food and price are hard to beat.:licking:

I'm an Okie that spent 3 years in Albuquerque...enough time to learn to love GOOD Mexican food and understand the meaning of "cigarillo" and "Chile" and "Verde". I learned to spell nothing, but yeah, I'm dyslectic and misspell Relleno consistently. I also have a brother (RIP) who retired from the fire department there; he was the cook, and he willed me the recipe for green chili stew...and I LOVE it. Recipe upon request.

BTW, I mix my own rib rubb...and Chipotle (pronounced chuh potel at my house) is a key ingredient. Recipe upon request.

I figured, you managed to understand my Tean speak in another thread, I could understand your "Okie" speak here!

I love the NM Mexican food, but really like the spicy, Tex-Mex the best! :licking:

Yes, 2LaneCruzer, please share your green chile recipe. We grow them and have enjoyed trying different recipes. Best I ever had was in Gallup, NM a couple of years ago. We recently had a Tex-mex restaurant open nearby, named Chuy's - a chain I believe, but with the best chile rellenos I've had in a long time - and with Hatch chile sauce on top.

Chuy's is a chain, and not as good as they were 20 years ago. I can see where they would expand away from Texas, with their way of cooking now.

farmgirl19 - I guess that about sums up the limited amount of Tex-Mex we have here in Central Virginia - that Chuy's seems so good here. We do have some good local Mexican restaurants, but nothing like out your way.

wngsprd; I'd love to spend extra time in your neck of the woods, but would have to open my own restaurant, or eatery. Not sure how well it would do, in your area. When I was traveling over the globe, I accused the chef of having a "gringo in the kitchen" when I was in Mexico the last time. I wasn't fully aware that what I called "Mexican food" was actually "Tex-Mex".

If I ever make it back you direction, I'll drag my travel trailer, and cook for the masses. I love to cook amd love to eat, but everything I make would feed an army, so I always have to share of freeze when I cook!

I will ask my girlfriend for her recipe. She is kind of a food snob and does not like texmex. She likes her chile rellenos stuffed with Mexican cheese "queso fresco". She's from Mexico, and sometimes we have to find a place that serves texmex and authentic Mexican food.

It's a deal, wngsprd! I always thought cooking for the masses would be a neat job, since I love to cook. If the food is a hit, maybe someone would like the recipes to make a go of the business!

Okay, you can call me anything you like, but my 35 years of working with technical publications, writing, and instructional materials makes me a bit of a language snob. I'm gonna tell you that Wikipedia is just wrong on their spelling. I don't expect everyone to agree, but I always have been taught that chilly is what you feel when it is cold, chili is a pepper, chiles is the plural of chili, and Chile is a country in South America. I think the spelling of "Chile relleno" is because people really mean "chiles rellenos," the plural form of chili. A single dish would be chili relleno or chili rellenos. Anyhow, everytime I see Chile rellenos, I start to get an eye tic.:D Just remember, everything you read on the internet is not always correct, unless it comes form me, of course.;)
