To prevent creosote buildup and the resulting chimney fires the flue has to remain as hot as possible. That way the hot gases containing all that nasty stuff travel all the way out the end of the flue. That's why most codes specify double wall/triplewall/metalbestos pipe - to keep that inner pipe hot.
