There's a few pros and cons to those devices.
No skype would be a deal breaker for us, as we use that with our remote children (hahaha).
Some of the apps won't function off-line.
I'm sure you've looked at some other issues that may concern you, but those are the two that pop out to me.
A good way to test is try loading the Chrome browser on your current PC and using that AND ONLY THAT for a week or two to do everything. If you like it, then go for a Chromebook. If you find there's things you cannot do through only Chrome, then that settles that.
They are awful dirt cheap at the low end, that's for sure. And they're supposed to update automatically. All your stuff (photos, email, etc... ) is stored out on the web, so you can access it anywhere in the world. And it should be backed up automatically out there.
Another thing I don't like is that Google has all your stuff (like they don't now anyway). If they go down, and they rarely do, but it has happened, you can't get your stuff, regardless of how many computers you have, Chromebook or not. So that's not really specific to Chromebooks, just a rant on my part.
