You installed a new PTO clutch. This is the dual clutch assembly, right? Along with a new plate for the drive clutch. So this is a live PTO tractor, not independent PTO. Now when you engage the PTO the engine slows down, like it's under heavy load? It doesn't have this problem with PTO turned off? If I'm understanding this correctly, then it doesn't sound like a clutch problem.

That's a two stage clutch, right? After replacing that clutch, you are no newby to mechanical things.
How is the rest of the MF185. Hours? History?

First thing on a two stage clutch is getting the clearance set right. The main clutch and PTO clutch both need clearance so that the PTO gear shaft isn't spinning all the time. But you know that.....

Next suspect would be the PTO shaft bearings. It looks like a standard mechanical PTO with a large ball bearing at the rear next to the oil seal. plus Some sort of bearing or bushing on the front nose of the PTO shaft.... and who knows what on the sliding gear.

When engaged, Is the PTO making rumbling sounds or leaking oil out past the rear seal?

I sure wouldn't be running the PTO until getting this figured out.
Here is a picture of the PTO.
