I am no building expert by any stretch, but I can tell you what happened in my "Kioti Den" My Carolina carport metal building. It had no real ventilation when built, and it would literally rain inside. I put ventilation panels in both ends to get some flow thru, and the problem virtually disappeared. I have very little to no condensation now. I would have liked to have vents on the roof, but could not figure out a good way to install them. But the gable end panels I cut in did the trick.

Also, with poly under the slab and a sealer on top, I shouldn't get any moisture from the ground.

Not from the ground, but if it ever rains, and you park your car inside, you have water(all over the car), and heat(hot engine). Both together are going to cause condensation on any cooler surface.

Since heat rises, most of your condensation issues are going to be with the roof. Not knowing your area, but living in an area with a lot of humidity, I've never seen any issues with the metal suffering from condensation. My guess is that the air from the ground goes up the walls and removes any that forms. Adding house wrap or siding probably wouldn't give you any measurable change. Just be more money spent without any real return for it.
