That's why I opted for a propane smoker, and haven't looked back!

Glenn, last year (well, year before last now;) ) our next door neighbor was given one of those LPG smokers from Walmart for a Christmas present from a brother-in-law. He has certainly done a fine job on some pulled pork and on some ribs with it, so I thought I might want one, and I suppose they're good, but just looking at them in the store, they just seemed to be too flimsy and cheaply built to suit me.

Well, we had dinner with all the guests, and they were all so impressed. The pork was EXCELLENT. The best I've ever eaten. The Vinison was great. And the chicken was OK. I thought the first one I cooked was better. This one seemed a little tough. Probably because I had a hard time holding the temp up high with all the wind and rain. However, it was juicy and full of flavor. I had an entire Boston butt that was not even touched. One would have been plenty, I didn't need two after all. So I made sure everyone took a plate home with them. All-n-all, we had a lot of fun today. I'm glad I battled the wind and rain now. Maybe next time the actual smoking process will be more enjoyable.

Also, the bag trick is the way to go. Give it a try the next time you smoke and see what you think.
