Yep, you could rig it with a double pole single throw switch. Just be sure that the current rating will accommodate the clutch requirements. I personally wouldn't rig it because you lose your safety protects and also have to jumper two of the wires on the other half of the plug that connects to the pto switch in order to complete your start circuit.
