I can tell you what I did: Main distribution panel (placed at the bottom of an existing pole). Underground to 4 buildings from there: house, barn, shop, horse barn, oh and the well. All direct burial (no heating losses). Buried a "warning buried cable" plastic tape (per code at the time) roughly 1' above it.
The shop has 100A. About the same space you have. I put 4x4 boxes (all outdoor stuff) at least one every 10 ft, on each wall, & by the door openings, and one outside on each end (where slabs were). Each box had 2 circuits (beige and white colors). The first box on each wall has a 20 amp feed-through gfi in it for each circuit (much cheaper than a gfi breaker). Gives you at least one place on each wall with a 20 amp 110v plug. Small mig welders often use this, as will occasional other tools.
I don't have enough 110. I would do it over with 2x as many circuits and about 2x as many boxes (well, close to that many more).
You will want a motion sensor powered light (makes it a lot easier when you realize it got too dark on you and you need to go out to the shop). I wired mine to turn on one outside, and one inside light. That way you can enter the shop and either get what you needed, or find the switch you needed to turn on the inside lights. Get rid of the dusk to dawn sensor (there is a very cheap insert you can buy for the top mounted sensor). Why light up the country side when you aren't out there? And power will never go down in price. And your place will seem more like you are in the country! You can find a similar light to this, which shines the light down (instead of blinding you as you walk to it). Gooseneck Barn Lights Home Depot had one for not much a while back.
