Some of the real cheap guns' couplers are not adjustable. You take what you get, which is why they were so cheap in both (cents) of the word. :)

I just bought a grease gun at TSC - most expensive one they had by OEM. I cant even figure out how to get the bloody thing to work. The instructions were cursory and don't actually even have any pictures or define any of the parts. First tractor I have ever owned - 3 days old - so I have no idea what I am doing. First canister of lube i couldn't get anything to come out the nozzle and it exploded all over the place when I opened it up to troubleshoot. Could someone be patient enough to explain even the basics of grease-gun use?

What I did - connected the hose to the gun head. Attached something to the end of the hose (I presume the coupler). Then, as per the instructions, I pulled back the follower, removed the plastic cap from the grease cartridge and inserted it into the gun. Then I removed the pull-tab from the other end and reseated the head. Then I pumped the hand lever about 40 times...nothing. Opened up the head -> me covered with grease.

The plastic cap that you removed.... you shouldn't have done that. That end goes into the 'tube' of the grease gun first, with the plastic end on the tube or grease intact. Then you remove the end with the pull tab and screw on the 'barrel' end of the grease gun.

Snatchface........you make me laugh.......only cause along time ago...in a far away land.....I did the same thing to myself (some 45+years ago, and yes they had grease guns back then too, but no cartridges :( . Made for messy reloads of the gun).

Simplest suggestion on grease gun basics is just google "grease gun use" and you'll find all sorts of articles about it. Here's one, Grease Guns - Learning the Basics.

This comment confuses me because on my two very ordinary grease guns, you DO remove the plastic cap from a grease tube, put that open end in the bottom of the gun (where the plunger is), then you pull the tab off the end now sitting at the head end of the gun.

There are many articles on the web about using a grease gun. As previously stated just google using a grease gun. Here is a link to a discussion on loading a grease gun. I put a pdf in there that helped me alot.

That pdf you posted does a very nice job explaining all the methods of loading/emptying different style grease guns.

Look in the grease gun fitting and you might notice there are prongs in there. If they are not lined up right the fitting won't go in the grease gun. Mine does the same thing with my new fitting. My old one works perfect. I think it's because of a cheap female fitting in the gun.

I had the same problem with my new grease gun, looked in the coupling and there were three jaws that clamped onto the zerk and it was a lot of trouble to get the coupling on the zerk. I went to NAPA and bought a "good" coupling no more problem connecting, the new coupling has four jaws and they don't flop around like the cheap ones did.
