Good idea. For a long time, I have been planning on redoing the deck on my Dixie Chopper pretty much the same way. I primarily need additional plates under the blade path. This Florida sand and speed of the blades make a good sand blaster. Eats the blades up also. These decks cost new about $500, and the additional steel will extend the life of the unit. I will use the spindle bolts to hold the plate in the middle and tack weld the outside edges. I wonder if stainless steel will hold up to sand blasting better than steel.
