My wife asked me tonight if she gave me too many mashed potatoes. I said, "If I ever tell you I have too many potatoes, call the Doc. There's something bad wrong."

Potatoes do very well sandy soil that has good nutrients. Not pure sand at all. Just well drained, good black dirt.

We always keep a box or two of instant potatoes in the pantry, just in case. They're great if you have a last minute change and need to get mashed taters done real quick or you want mashed taters and you're out of real taters. You can always tinker with the portions to give different taste/texture. After all, they are real taters that have all the water dried out of them.
I watched a really good show on the History Channel about potatoes and they showed them making instant potatoes and how they shipped them all over the world

The one potato version I _don't_ like. Unfortunately I turned into the 'chief cook and bottle washer' when my wife became disabled and she loves them.

Sitting here mulling over my morening breakfast. Will I shred or slice my baked potatoes for it. Decisions, decisions. I "bake" about 5lbs at a time but not to "full baked" 400F for 50-55 minutes for use in breakfasts or Microwaved and served with gravy. There is omthing about cooking them with skin on that enhances the flavor. Never did like the microwave "baked" potatoes. Those aren't 'baked', just steamed.

Thanks for the thought Creekbend. Everythings going great. In fact, Mommy is planning his 1st birthday party. He's a happy and healthy little boy. I'm attempting to explain what the word NO means theses days. I think it's going to be a long process :)

Extrapolating from the experiences I have had with my twin Grandsons, "Run" and "Don't Run!" meant the same thing.

One of the only good things about winter is that the shop stays cool enough that I can keep 50 pound sacks of potatoes and eat cheap all winter. I'll boil up a huge pot of them and have some with sour cream, next day a couple fried up with bacon and an onion, and a skillet hashbrown with omelets the third day. Fortunately I love potatoes, and with smart shopping these meals are under a buck each, and I'm not going hungry by any means.
