I want to do away with my oil dummy light on my ford 3000 diesel. I want to put a mechanical guage on it. How do Ido this do I just take off the low oil sending unit on the left side of the block and put the hose from the mecahnical guage right in or what? And also how many psi guage should I get

You can leave the idiot light on and intact and connect a mechanical gauge into the other 1/4" NPT hole on the block that is on the same horozontal plane. A light that comes on is more effective at getting your attention than a gauge needle that drops to zero. Nothing less than a 75 PSI gauge.

Where is this other other plug located on the block. And should it just run 30ish to 40ish like a normal truck motor

Additional plug is located directly aft of the current sending unit. oil pressure spec is 60-70psi @ 1000 ERPM.
