Last night the wife made stew. Cooked in the crockpot all day. It was fantastic.

Venison will keep you alive, happy, and out of the meat department at stores where they sell pork that lived it's life locked in a barn and beef that stood knee deep in s#!t for the last year of it's life. Talk about lack of "quality"!

Which why we only eat our home raised, home processed pork and beef. (as well as chicken and catfish) Both are allowed pasture and both grain fed as well.

I find vension too lean, personally....but my dogs love it !

I have had canned venison. depends who makes it. Some was good, some was bad. Never had any that was great, but I heard other people rave about it. The best I ever had tasted like a good version of "potted meat". Same went with canned beef.

All I know is my dogs highly recommend it over Alpo.

Now if you want something REALLY good canned, bacon is the ticket !

Well, I am at a disadvantage, as I have never eaten Alpo. As for the canned bacon, I can't really imagine that.

A few things come to mind... first off, lucky d.a.m.n dogs! My dogs get the scraps from processing deer and it's much better than Alpo (ps. no need to try alpo, just looking at it is enough) Second, too lean?!?!??! I'll chalk it up to different stroke for different folks... Third, can you tell me more about the canned bacon... I may need this to get out of the dog house some day (the dog doesn't like to share his venison when I'm in his house).

The jar looks to be before cooking?!? And what you are rolling up is the after being canned AND cooked? Wife loves burnt bacon, I like to just heat it up (so to speak). I imaging you do this since you get so much after a butchering...

They are. One rescued from the pound, the other a roadside castoff....now named (get ready for it)....Lucky !

The jar is one of my early attempts....rolled up raw bacon in parchment paper, and processed 60min/pint. It fully cooks the bacon (even though it doesn't look it in the pic), but when you take it out to crisp it up, it crumbles all to pieces....I couldn't get a 'strip' at all. Fine for on top a salad, but not typical bacon.

So then, I got to frying it all about 3/4 crisp (we end up with about 40-50lbs from two pigs each year we raise. I cure my own with a Morton salt mix), then roll it in paper, and process that 60min.

Works MUCH better. I still haven't got it to Yoder's Canned Bacon yet (look around on the net and find you a can of it if you want to try premium canned bacon !!), but it's pretty good. Remove it from the jar, crisp it up a little and you're good to go.
